On a recent week-long visit, we were treated to an in-depth look at this unique property. Nestled on the site of a historic pineapple plantation, this 15-acre nature sanctuary is one of the Keys' premiere wedding destinations. The panoramic event spaces with a view of soft sand beaches and sparkling turquoise water will give you and your guests an unforgettable experience.
The site pays homage to their past with a subtle pineapple theme throughout the resort. The pineapple is a symbol of hospitality, which you will feel from the moment you check in. The staff truly sets the tone of a homey, upscale feel. You'll enjoy the Caribbean-like atmosphere the islands are famous for.

Airy suites just steps from the soft sand feature expansive water views that are unmatched. The larger waterfront suites offer 1,700-square feet of space with Roman bath tubs and wrap-around terraces. The chic décor and beach theme will bring you into island mode the moment you walk in your room. Designed by California-based Powerstrip Studios, the resort boasts compelling design integrations, including hand-carved wood furnishings, wicker seating, timeless metalwork, textured white finishes, handcrafted furniture, eclectic artwork, private terraces and custom-tile bathrooms.
Once you have settled into the property, the complimentary activities are endless! From biking, paddle boarding, kayaking, to dock fishing, there is something for everyone to enjoy. Jet skis, sunset cruises, deep sea fishing, beach golf with bio-degradable golf balls, parasailing, diving and sea plane adventures can be arranged for an additional fee. We recommend a visit to John Pennekamp Coral Reef State Park, which is the first undersea park in the country.
The Florida Keys are home to the third largest barrier reef in the world and the only living coral reef in the United States, making Key Largo a top diving and snorkeling location. We couldn’t pass up a private snorkeling charter with WildDolphinTours.com. They created a magical day at Alligator Reef, one of the top snorkeling spots in the world, teeming with tropical fish. We snorkeled with sea turtles, sharks, barracuda and thousands of fish below the lighthouse. They offer private charters to snorkel living coral reefs, learn to snorkel and explore shipwrecks. They also offer romantic excursions and sunset cruises that would be the perfect place to pop the question, then the champagne!
When it comes to food, Executive Chef Andy Papson brings a dash of New Orleans soul to the onsite restaurants. The culinary team utilizes an abundance of local island ingredients and incorporates items from their rooftop garden to create dining and cocktail experiences with the freshest and most flavorful menus.Restaurants include a beachfront tiki bar, Dry Rocks (an upscale beach atmosphere complete with live music and fire pits), a pool bar, and a more formal restaurant, Calusa. Calusa is an indoor/outdoor restaurant overlooking the water. A short drive down the Overseas Highway provides a stretch of local bars and restaurants should you wish to sample something other than the onsite fare.
Guests will experience the perfect marriage of unique culinary flavors, exceptional service and nature-inspired elegance. The hotel offers a unique Dock to Dish program, which entails a fishing outing to catch sustainable seafood. They partner with local fishing boat businesses to accommodate guests to sea. Following the catch, the chef will create a hyper-local gourmet dinner. Only ingredients found within 100 miles of the hotel accompany the main catch, and all of the catch including bones and scraps are used in soups, stocks or sauces.
While the hotel is family friendly, you'll find endless quiet and secluded spots for a more private adult experience. Take one of the many walking trails weaving through mangrove trees and you’ll stumble upon one of our favorite places on the island, Hammock Beach. It’s a quiet, shaded, serene beach with hammocks and loungers that make for a perfect place to watch the sunset. Coconut Beach is the larger, more active beach where you’ll find access to water activities. There are two heated swimming pools as well, one for adults only and one for families, both enhanced by a waterfall grotto. The main building features a library with hundreds of books available to guests and a billiards table. The cozy seating makes it the perfect place to relax in the evenings. The fitness center, also in the main building, features a variety of state-of-the-art equipment.
Baker’s Cay is exceedingly pet-friendly. We loved meeting a friendly Siberian husky named 'Maya.' She is as sweet and welcoming as the rest of the staff, and takes her role as the hotel’s ‘Director of Pet Relations’ quite seriously. She spends her days lounging around the property after checking in with guests.
Many hotels boast about their conservation and sustainability efforts, but Baker’s Cay implements those efforts on a whole new level. Water stations for refillable bottles are located throughout the property, and their complimentary sunblock contains natural ingredients safe for the sea. The staff wear either Tom's shoes, which donate a pair of shoes to a child in need for each purchase, or Rothy's, made from 100% recycled water bottles and other recycled materials. They have partnered with the Coral Reef Restoration Foundation, Everglades Alligator Farm and Dolphin Plus Marine Mammal Responder to educate guests and enjoy projects with children. Each room is equipped with lavish, locally sourced custom bathroom products.
Baker's Cay will accommodate an elopement, intimate ceremony on the beach, or more lavish affair in one of the picturesque ballrooms or on the grand lawn. The hotel has three ballrooms and several outdoor spaces totaling 25,000 square feet of available space for events. There is a space to fit every personality. Couples can create week-long festivities including a day spent hosting a grill-out by the pool, a shrimp boil on the beach, an onsite Aveda spa experience and much more! The event team offers services for weddings including wedding ceremonies, engagement parties and bridal showers. They provide event items such as aisle markers and runners, altars, arches, chairs, a dance floor, barware, a chocolate fountain, and more.
If you and your guests choose to travel by boat, there is a permanent dock with 21 slips available for overnight stays or day visits. Guest can also arrive by sea plane.

We spent the day boating around the 38 acre lake, surrounded by swans, magical gardens and William Waldorf Astor’s fine collection of Italian sculptures. It was so dreamy, we had to pinch ourselves! To top it all off, fireworks can also be arranged as guests gather on the terrace of The Loggia to watch a spectacular display set to music as the perfect end to your royal wedding.

As our first stop after a long flight, the County Hall Hotel transformed us into a proper British setting, and did not disappoint with lavish accommodations that brought the city highlights right to our window. The property was built over 100 years ago to house London’s government and now features beautifully restored parquet flooring, elegantly high ceilings, ornate cornicing, original sash windows, and oak panelling that tell one story: that of distinguished heritage as a place where great minds met.
